Class 36 student Mostafa Gaber turns risotto cakes just minutes before the food was to leave Distribution Street for a lunch hour Encore Catering event Wednesday. The Culinary School classroom is both laboratory and production facility as students learn the culinary arts under near-real-life conditions.
