Creamy Clam & Tomato Chowder
1 cup diced celery
1 cup diced onions
1 cut diced carrots
4 cups minced clams with juice
2 cups diced whole canned tomatoes
with
juice
4 diced potatoes, medium size
1 1/2 cups tomato sauce
1 quart heavy cream
1/2 cup clam base
1 quart water
2 tablespoons vegetable oil
Slurry (corn starch & water)
Salt & pepper
Sautee celery, onions, carrots in vegetable oil until tender. Add water and clam base to vegetables, bring to a boil. Add potatoes, tomatoes, tomato sauce and clams. Slowly add heavy cream while constantly stirring at a low heat. Add slurry to preferred thickness. Season with salt and pepper.

The Community Culinary School of Charlotte has gained national attention for its success in helping people who have experienced barriers to employment. If you're dissatisfied with your job and want to work hard for something better in the culinary arts, CCSC is for you.
The school combines classroom training with hands-on food preparation experience in a production kitchen feeding more than 700 people a day. Immersion in a teamwork environment during the school's three-month class sessions prepares graduates for the workplace.

Doris Mobley, left, who graduated with the Culinary School's Class 28, returned
to the School Thursday to receive her full knife set. The gift traditionally
marks a graduate's success in the culinary industry after three to nine months
employment, Executive Director Ron Ahlert said. The tool sets, a gift of
Piedmont Natural Gas, ensure that graduates have "the proper tools to become a
success," he said.
